Raw Mango Jaggery ( Gudh ki Launji )

Launji is made in various ways sweet, sour, spicy.. I have innovated this pickle with jaggery.

Recipe :-

Ingredients –

Raw Mangoes – 4 ( Cut in stripes)

Jaggery – 1 Cup

Mustard seed – 1/2 tsp

Nigella seeds ( kalonji ) – 1/2 tsp

Fennel seed powder – 1/2 tsp

Dry Red Chilli – 2

Pistachio – 5 ( Chopped )

Almonds – 5 ( Chopped )

Walnuts – 2 ( Chopped )

Charoli seeds ( Chironji ) – 2 tsp

Red chilli powder – a pinch

Salt – a pinch

Water – 1 tbsp

Oil – 1 tbsp

Method :-

Put non stick pan on flame adding oil with mustard seed, let them crackle. Than fry raw mangoes, dry red chilli for 2 min.

Add jaggery, fennel seed powder, nigella seeds, red chilli powder, salt, all chopped dry fruits, water. Mix all of them, cover the lid & cook till it becomes little thick.

Take it out in a bowl, let it cool down.

Store it in an air tight container keeping it in fridge.

Your Raw Mango Jaggery Pickle is ready.
